
The August vegetable harvests just keep coming week by week and they are truly colourful.
There is such a variety of vegetables and fruit to pick and create some magic in the kitchen with.
Garlic Butter Vegetables
Last night we picked a ball courgette, baby yellow squash, tomatoes, sweetcorn and spinach.
I made a garlic butter (garlic from the garden) and fried the two squashes in cubes with the garlic butter. I boiled the two sweetcorn cobs in a pan of boiling water for 5-7 mins and then cut off the sweetcorn with a knife. I added the sweetcorn to the vegetables in the frying pan and spinach chopped up to wilt in the last few minutes of cooking. We had it as a vegetable side to go with our sausages.

Homemade Coleslaw
Tonight’s dinner side, we will make homemade coleslaw with kohl Rabi, carrot and spring onion, all grated and mixed with mayonnaise.

Blackberries
Our blackberries are slowly ripening, we only have one thornless plant but it feeds 3 of us for berries and yogurt every weekend for a while.

Strawberries
We bought 6 Strawberry plants from our local garden centre in May and planted them in a large pot. The varieties had white and pink flowers and they are still providing us with large strawberries in August with no sign of stopping anytime soon.

Blueberries
We have 3 blueberry plants which produce berries at different times of the year. These 3 year old bushes now have come to an end but have provided us with a good crop of berries this year.

How to keep and store Blueberries
One word – Freeze them. To keep your blueberries fresh for longer the best method is to freeze them.
It easy to do, wash your harvested blueberries, dry them on a towel, then lay them out on a tray so they are not touching and put in the freezer. Once frozen, pop each frozen blueberry into a freezer bag and it’s there when you need them for smoothies, deserts etc.
Did you know? Blueberries can be frozen for up to 1 year.
