How to Harvest & Cook Cauliflower Romanesco

I am quite excited to say I have harvested my Cauliflower- Romanesco today, my 3 little gems of goodness have been growing away merrily since Late August but with all the rain we have had, two have gone a mouldy shade of grey on top of the spirals. I still harvested them and cut around the grey bits as the stalks and stem are nutritious too.

How to Harvest Cauliflower- Romanesco in 6 Steps

  • 1. Use a small but sharp knife from the kitchen or a garden knife.
  • 2. Find the bottom of the cauliflower stalk
  • 3. Use the knife (making sure your fingers are out of the way) and cut off the stalk at the bottom of the cauliflower
  • 4. Bring in the cauliflower and give it a good wash in case there was any bugs or slugs in the foliage.
  • 5. Cook simply by cutting up the cauliflower into chunks following the line of the florets and removing any grey mouldy parts.
  • 6. Put into boiling water and cook for 5-10 minutes.

What does Cauliflower – Romanesco taste like?

It tastes of a mild version of cauliflower but also has a hint of broccoli taste. Delicious in my view. Cook like a normal cauliflower but it takes less time to cook.
